Simple Greek Salad

2 cup Lettuce, romaine
1/2 medium Tomato (chopped)
1/2 cucumber(s) Cucumber (chopped)
1/4 small Red onion (chopped, about 2 tbsp)
1/4 cup Kalamata olives
1 tbsp Feta cheese (optional)
1 chicken breast (196 g) Chicken breast, boneless, skinless, grilled (optional)
1 tbsp Greek salad dressing (vinaigrette)


  1. Toss all ingredients (except chicken) together.
  2. Top with chicken and enjoy!


To grill chicken:

  • Preheat oven to 400F
  • Toss chicken breast with olive oil, salt and pepper (or other seasoning of choice)
  • Mix well to coat
  • Place on a lightly greased pan and bake for 22-26 minutes until internal temperature reaches 165F
  • Let chicken rest for 5 minutes before slicing

Remember: oven times and temperatures may vary, size of chicken breast may change the duration of cooking time aswell - always check internal temperature
