Simple Roasted Chicken Breast

2 breast Chicken breast, with skin
1 tbsp Dijon mustard
1 pinch Salt
1 dash Black pepper (omit for AIP version)
1 whole lemon(s) Lemon peel (zest)
2 clove(s) Garlic
1/3 cup Parsley, fresh
2 tsp Olive Oil, Extra Virgin


  1. Preheat oven to 375°F (175°C).
  2. Brush chicken with dijon mustard and sprinkle with salt and pepper. In a bowl mix lemon zest, garlic, parsley and olive oil.
  3. Place chicken on a prepared baking sheet and press parsley mixture onto the top of the breast.
  4. Roast for 30 minutes or until no longer pink inside. Moist and delicious, keep leftovers as a salad topper (Internal temperature should read 165°F/74°C).

  • Omit black pepper and Dijon mustard
