Ingredients


1/4 cup Extra virgin olive oil (for Lemon Dressing)
2 1/2 tbsp Lemon juice (for Lemon Dressing)
1 clove(s) Garlic (minced, for Lemon Dressing)
1/2 tsp Cumin (for Lemon Dressing)
1/2 tsp Sea salt, fine (for Lemon Dressing)
1/4 tsp Dijon mustard (for Lemon Dressing)
2 cup shredded Red cabbage
2 cup shredded Green cabbage
2 cup grated Carrots
1/4 cup Cilantro (coriander) (chopped)
2 tbsp Pumpkin seeds (pepitas)
2 tbsp hulled Sunflower seeds
1 tbsp Sesame seeds
1 tbsp Poppy seeds

Instructions


  1. Prepare the lemon dressing by adding all "Lemon dressing" ingredients into a bowl and mixing them together.
  2. In a medium serving bowl, combine the chopped and prepared cabbage, carrots, and cilantro. Set aside.
  3. Measure out your seeds into a small skillet. Toast over medium heat, stirring frequently until the seeds are fragrant and the pepitas are starting to make little popping noises. Pour the toasted seeds into the serving bowl and toss to combine.
  4. Drizzle dressing over the slaw and toss until all of the ingredients are lightly coated in dressing. Taste and add an additional tablespoon of lemon juice if the slaw needs a little more zip.
