2 tbsp Coconut oil
1 medium Red onion (diced)
2 cup chopped Carrots (cut into circles)
1 large potato(es) Sweet potato (chopped)
1 tsp, ground Thyme, dried
1 tsp Oregano, dried
1 pinch Sea Salt
1 dash Black pepper

Instructions


Over medium-high heat, melt coconut oil. Add onions, sweet potato and carrots, cook until soft. Add seasonings and cook for 1-2 minutes until warm.

Serve with grilled chicken breast, salmon, grass fed steak or chickpeas or navy beans.
