Ingredients


2 tbsp Ghee (or butter)
4 medium Zucchini (cut into circles)
1 medium pepper(s) Red bell pepper (chopped or sliced)
1 medium Red onion (diced)
2 medium Tomato (chopped)
1 tsp, ground Thyme, dried
1 tsp Oregano, dried
1 dash Salt and pepper

Instructions


1. Over medium-high heat, melt ghee in a large skillet.

2. Add onions, peppers and zucchini to the skillet, cook until soft, about 5 minutes.

3. Add tomatoes and seasonings and cook for 1-2 minutes until warm.

Serve and enjoy!
