3 breast | Chicken breast, boneless, skinless (cubed or sliced. protein of your choice) |
2 medium pepper(s) | Red bell pepper (sliced) |
3 cup | Broccoli florets |
1 cup | White mushrooms (sliced) |
1 onion(s) | Sweet onion (sliced) |
1 tbsp | Coconut oil |
1 package | White rice, long-grain, instant, dry (1-2 packages instant rice (if desired)) |
4 cup | Lettuce, romaine (if desired, for eating stir fry with) |
Bring a pot of water to boil. Add broccoli and par-boil (about 5 minutes until slightly tender)
Heat coconut oil in a wok or frying pan.
Add broccoli, red pepper, and onion and cook until somewhat tender.
Remove from pan temporarily and set aside.
Add chicken to pan and cook through until no longer pink. Add mushrooms and return other veggies to pan.
Add seasoning if you like, lemon pepper, garlic, etc.
Serve warm over rice or a bed of greens.
