Dressing: combine grainy mustard, oil and vinegar in jar and shake like crazy
Rip head of green leaf lettuce into large pieces (to be cut when eating).
Add thinly sliced onion and lettuce into a bowl, drizzle with dressing, lightly mix.
Season with a touch of S & P and serve along side your favourite protein or enjoy as a nice light snack.
