1 tbsp Olive Oil, Extra Virgin
454 gm Beef loin steak, lean (prime sirloin, cut into 1 inch pieces)
1 tsp Paprika, smoked
1 tsp, ground Thyme, dried
1 tsp Black pepper
2 tbsp Garlic (minced)
227 gm Button mushrooms (sliced)
2 tbsp All-purpose white flour (Hill Country Fair)
227 gm Beef broth (stock), low-sodium (H-E-B Select Ingredients)
1/4 cup Greek yogurt, plain, 1% M.F.
2 cup Pasta, egg noodles, unenriched, cooked

Instructions


  1. Heat oil in a large sauté pan over high heat.
  2. Add the steak to the pan and season generously with paprika, thyme and pepper.
  3. Reduce heat to medium-high and add garlic and pre-sliced mushrooms.
  4. Cook an additional 5 minutes or until beef and mushrooms have browned well.
  5. Sprinkle the mushrooms and beef with flour and stir until flour is combined.
  6. Slowly add in the beef broth in and bring up to a simmer until sauce thickens.
  7. Remove from the heat and stir in yogurt.
  8. Serve over noodles.
