|1 cup||Baby spinach|
|1/4 cup||Tofu, regular, extra firm (flavoured tofu is good!)|
|1 tbsp||Sunflower seeds|
|1/2 cup||Green/yellow string beans, raw (steamed)|
|1 cup||Broccoli florets (steamed)|
|1/4 medium||Navel orange|
|5 medium||Radish (sliced)|
|1 tbsp||Canola oil|
Combine arugula and spinach into large bowl and drizzle with oil and juice from quartered orange slice.
Mix in all other ingredients (tofu, beans, broccoli, seeds, radish and hummus).
The hummus makes an excellent addition to the salad for a creamy textured dressing
I do the beans and broccoli in a large batch on Sunday so each day of the week I assemble the ingredients at work/before I leave for ease
Sub in your favourite nuts for the sunflower seeds (I love walnuts or pistachios)
I like to add haloomi cheese in cubes occasionally
