1 cup | Baby spinach |
1 cup | Arugula |
1/4 cup | Tofu, regular, extra firm (flavoured tofu is good!) |
1 tbsp | Sunflower seeds |
1/2 cup | Green/yellow string beans, raw (steamed) |
1 cup | Broccoli florets (steamed) |
1/4 medium | Navel orange |
5 medium | Radish (sliced) |
3 tbsp | Hummus |
1 tbsp | Canola oil |
Combine arugula and spinach into large bowl and drizzle with oil and juice from quartered orange slice.
Mix in all other ingredients (tofu, beans, broccoli, seeds, radish and hummus).
Tips:
The hummus makes an excellent addition to the salad for a creamy textured dressing
I do the beans and broccoli in a large batch on Sunday so each day of the week I assemble the ingredients at work/before I leave for ease
Sub in your favourite nuts for the sunflower seeds (I love walnuts or pistachios)
I like to add haloomi cheese in cubes occasionally
