Slim Fettuccine Alfredo

160 gm Pasta, fettuccine, whole-wheat, dry
1/2 cup Parmesan cheese, grated, low fat
1/2 cup Partly skimmed milk, 1% M.F.
1/2 cup Chicken broth (stock), low sodium
3 tbsp Wheat flour, whole wheat
4 clove(s) Garlic (minced)
1 tbsp Canola and soybean oil


Boil water, salt when at a rolling boil and cook pasta el dente (about 10 mins).
Meanwhile, using a saucepan on med-high heat, cook minced garlic in oil for 1 min.
Add flour and cook for another minute.
Slowly whisk in chicken stock and when completely combined, whisk in milk.
Let sauce cook over low-med heat whisking occasionally until thick.
Drain pasta and combine with sauce. Serve immediately (garnish with parsley if desired)
