1. Wash potatoes and prick with a fork 5-6 times per potato, then rub with olive oil, and sprinkle with salt.
2. Place the potatoes in a slow cooker, cover, and cook on low for 7 1/2 to 8 hours until tender.
You can use only sweet potatoes or russet potatoes if you like.
