1/2 cup Coconut milk, reduced fat
1/2 cup Peanut butter, smooth
1 can(28oz) Crushed tomatoes canned
1 medium Yellow onion (finely chopped)
2 medium pepper(s) Jalapeno pepper (seeded and finely chopped; optional)
2 tbsp Brown sugar
3 clove(s) Garlic (minced)
2 tsp Cumin (ground)
1 tsp Salt
1 tsp Black pepper
6 thigh(s) Chicken thighs, boneless, skinless (about 3 pounds)
1/2 bunch Cilantro (coriander) (chopped)
1 1/2 cup Basmati rice, dry

Instructions


  1. In a slow cooker (5 Quart), whisk coconut milk and peanut butter until smooth. 
  2. Stir in tomatoes, onion, peppers, brown sugar, garlic, and seasonings. 
  3. Add chicken; cook, covered, on low for 6 hours or until the chicken is tender and cooked through (165 degrees F). 
  4. In the last 20 minutes of cooking, prepare the rice according to package instructions.
  5. Before serving, stir well.
  6. Serve over rice with a sprinkle of cilantro.

Notes:

Quick Tip: 

  • Swap out the jalapeno peppers for diced green bell peppers if you prefer a less spicy dish.
