1 can (13.5 oz) Artichoke hearts, canned (drained, or frozen)
1 leaf Bay leaf
1/2 tsp Black pepper
1 cup Brown rice, long-grain, dry
2 medium Carrots (diced)
2 medium stalk(s) Celery (diced)
681 gm Chicken breast, boneless, skinless
6 cup Chicken broth (stock), low sodium
3 clove(s) Garlic (minced)
1/4 cup Lemon juice
1/4 cup Parsley, fresh (chopped)
1/2 tsp Salt
1 medium Yellow onion (diced)


Add everything to the slow cooker except the lemon juice and parsley. Cook on low for 8 hours.

Remove chicken and chop or shred and then add back to slow cooker.

Before serving, season with salt and pepper. Stir in the lemon juice and parsley.
