Slow Cooker 'Osso Bucco' Bone Marrow

Ingredients


4 1/2 kg Veal, shoulder, shank, lean (about 4-5lbs each )
1 large White onion (diced )
4 medium Carrots (sliced)
3 medium stalk(s) Celery (sliced. Plus leaves)
2 clove(s) Garlic (smashed)
1 can (28oz) Tomatoes, canned, stewed (San Marzano or another similar brand from italy with no other ingredients but tomatoes)
3 berries Juniper berries
3 clove Cloves
5 leaf Bay leaf
3 sprig Rosemary, fresh
15 gm Corn flour, whole grain (for dusting )
1 pinch Himalayan sea salt
1 dash Black pepper (fresh ground )
2 tbsp Extra virgin olive oil
2 tbsp White wine, dry

Instructions


Method

  1. Salt and pepper each shank on both sides. Dust in flour and sear on med-high heat in a sauce pan with olive oil. Cook for a couple minutes per side until a crust is formed. Add to the slow cooker.
  2. Deglaze the pan with white wine, scrapping off the golden bits with a plastic utensil, add to slow cooker.
  3. Add vegetables, canned tomato, herbs and spices as well as 1/2 cup of water.
  4. Let cook for 9 hours or until the marrow becomes soft and easily extruded. My slower only had 2 settings, so I left it on the lower of the two settings.
