400 gm Pork shoulder, whole, lean
1 1/2 tbsp Paprika
1 tbsp Cumin
2 tsp Coriander, ground
2/3 cup Water
2 cup Brown rice, medium-grain, dry (or rice of choice)
3 cup Coleslaw mix
1/4 cup Lime juice (fresh) (plus extra; wedges to garnish)
1/2 bunch Cilantro (coriander)

Instructions


  1. Add the paprika, cumin, and coriander to a bowl and stir to combine. 
  2. Rub the spice mix all over the pork.
  3. Place pork in slow cooker, pour water around the pork, and cook for 8 hours on the low setting, or until pork is very tender. 
  4. When the pork is done cooking, use two forks to shred the meat. 
  5. Switch the slow cooker setting to warm and prepare the rice according to package instructions.
  6. To serve, add rice and pulled pork to a bowl and divide the coleslaw mix. Finish with a squeeze of lime juice and a sprinkle of cilantro.
