1/3 cup Brown sugar (packed)
1/2 cup Chicken broth (stock), low sodium
1/3 cup Vinegar, white
3 tbsp Lemon juice
3 tbsp Soy sauce, low sodium (reduced-sodium)
3 tbsp Tomato paste, canned
1/2 tsp Garlic powder
1/2 tsp Ginger (ground or minced)
1/4 tsp Black pepper
454 gm Pork Chop (boneless, cut into 1-inch cubes)
1 large Yellow onion (cut into 1-inch pieces)
1 large pepper(s) Green bell pepper (cut into 1-inch pieces)
2 cup diced Pineapple (chunks, drained)
3 tbsp Cornstarch
1/3 cup Chicken broth (stock), low sodium
1 1/4 cup Basmati rice, dry (Hot cooked)

Instructions


  1. In a slow cooker, combine the first 9 ingredients. 
  2. Stir in pork chunks, onion, green pepper, and pineapple. Cook, covered, on low for 6-8 hours, or until pork is tender.
  3. Mix cornstarch and broth in a small bowl until smooth. Then gradually stir into the cooking juices. 
  4. Cook, covered, on low for another 15-20 minutes or until the sauce has thickened. 
  5. Meanwhile, prepare rice as per package instructions.
  6. Serve the Sweet and Sour pork over the rice. 

Notes:

Quick Tip:

  • To make ahead: Combine the first 9 ingredients in a large resealable plastic freezer bag. Add pork, onion, green pepper, and pineapple. Seal the bag, turn it to coat, and store it in the freezer. To use, place the filled freezer bag in the refrigerator and allow it to thaw completely (about 48 hours, or 2 days before you plan to cook). Then add the contents to the slow cooker and cook as directed.
