1 tbsp Extra virgin olive oil
2 medium Egg
57 gm Salmon, smoked
1/4 avocado(s) Avocado (cubed)
1 cup Spinach
1 pinch Salt and pepper


  1. Heat olive oil in a small frying pan. In a small bowl, scramble the eggs.
  2. Cut the salmon into small pieces. Add the salmon, and spinach to the pan and cook until spinach wilts, stirring often.
  3. Remove from heat, transfer to a plate, season with salt and pepper, and top with avocado. Enjoy!
