Smoked Salmon Canapes

6 slice Cocktail rye bread (quartered)
2 tbsp Lemon juice
2 tbsp Brewed black tea
1 tbsp Extra virgin olive oil
2 tsp Dijon mustard
1 dash Black pepper (to taste)
250 gm Salmon, smoked (sliced, finely chopped)
1/4 cup Red onion (diced)
3 tbsp Dill, fresh (chopped)
2 tbsp drained Capers, canned (rinsed, coarsely chopped)


  1. Preheat the oven to 325°F (160°C).
  2. Arrange the slices of rye bread in a single layer on the baking tray. Spray the tops of the slices lightly with cooking spray. Bake for 12–15 minutes or just until the slices are crisp.
  3. Whisk the lemon juice, tea, oil, mustard and pepper in a medium bowl. Add the smoked salmon, red onion, dill and capers. Toss to mix well.
  4. Shortly before serving, place smoked salmon topping on each slice of toast.
