Smoky Detox Tomato Sauce

681 gm Tomato (chopped in half)
2 medium Red onion (peeled and chopped)
4 clove(s) Garlic (peeled and chopped)
2 tsp Oregano, dried (or 2 tbsp. fresh)
1/2 cup Pumpkin purée, canned (can use squash or sweet potato)
227 gm Cremini (Italian) mushroom
1 bunch Baby spinach (large handful)
3 tbsp Tomato paste, canned
1 tsp Sea Salt
1 tsp Black pepper
1 dash Hot pepper (chili) flakes (a pinch or more)
2 leaf Basil, fresh (chopped, optional)


Preheat oven to 400F. Line baking sheet with parchment. Add tomatoes, red onion, garlic, oregano and balsamic to sheet and roast 35 minutes, stirring a couple times. Add veg puree and process until smooth.

Saute mushrooms in a bit of olive oil. When almost cooked add spinach, cover pan and wilt. Add blender contents, tomato paste, salt, pepper, chili flakes, bring to boil and simmer for 5 minutes.

Use over Meaty Cabbage Rolls or Spaghetti Squash.


Use only if you are NOT avoiding nightshade veggies – should be avoided if experiencing a lot of inflammation.

Freeze in 2-cup portions.
