454 gm Ground turkey, extra lean
4 clove(s) Garlic
1 tbsp Chili powder
1 tbsp Oregano, dried
3 chile Chipotle chiles in adobo sauce
1 medium pepper(s) Red bell pepper
1 large Yellow onion
1 can(s) (16 oz) Diced tomatoes, low sodium, canned
1 tbsp Tomato paste, low-sodium
1 can (19oz) Navy beans, canned (drained, rinsed)
4 tbsp Greek yogurt, plain, fat-free (topping, optional)
2 tbsp Chives (topping, optional)

Instructions


  1. Coat a large pot with vegetable oil and set over medium-high heat. 
  2. Add the ground turkey, garlic, chili powder, and oregano. Stir frequently with a fork to break meat up, and cook until no pink remains, from 5 to 7 minutes.
  3. Meanwhile, finely chop chipotles and chop pepper and onion. 
  4. Once the ground turkey is cooked, stir in the chipotles, red bell pepper, onion, diced tomatoes, tomato paste, and navy beans.
  5. Bring to a boil, then reduce heat to medium-low. Cover and simmer, stirring occasionally until vegetables are tender and flavors have developed 25 to 40 minutes.
  6. Great served with a dollop of plain low-fat yogurt and chopped chives.
