Sole Fillet with Tarragon-Caper Sauce

1/2 cup Mayonnaise, low fat
1 clove(s) Garlic (minced, added to mayonnaise)
1/2 whole lemon(s) Lemon juice
2 tbsp drained Capers, canned
1 pinch Sea Salt
4 fillet Flatfish (sole)
2 tbsp Butter, unsalted


Place the garlic moyo, lemon, tarragon and capers in a small bowl and mix until combined and set aside.

Rinse the fish and pat dry thoroughly with a paper towel. Sprinkle with sea salt.

Heat the butter in a cast iron skillet on medium heat. Sear the fish for about a minute or two a side, depending on the thickness of your fillets.

Remove from heat and spoon the creamy tarragon sauce over top.

Serve immediately and enjoy!
