Ingredients


1 medium stalk(s) Celery
1 cup Chicken broth (stock)
1/2 cup Cucumber (peeled and diced)
3 stalk(s) Green onion, scallion, ramp (cut into pieces)
1 cup shredded or chopped Iceberg lettuce
1 tbsp Parsley, fresh (chopped)
1/2 tsp Salt
1/2 cup Sour cream, light
1 cup Spinach
1/2 tsp White pepper

Instructions


Put all vegetables in a blender and purée. Add chicken stock mixture. Blend for 1 minute.

Refrigerate until cold.

Garnish with a sprig of mint before serving.
