Instructions:
Place the chicken breast in the skillet. Spray the pan with olive oil spray and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown and cooked through.
In a large salad bowl, combine mixed greens, black beans, corn, and diced red bell pepper.
Top with grilled chicken breast slices.
Toss gently to combine all ingredients.
