2 cup Quinoa, uncooked (dry)
2 clove(s) Garlic (crushed)
1 medium Yellow onion (chopped)
1 tsp Chili powder (or paprika)
1/2 tsp Oregano, dried
1/2 tsp Cumin (ground)
1/2 cup Frozen green peas
1/4 cup chopped Olives (black or green)
Cayenne pepper (pinch)
227 gm Tomato sauce, canned
1 3/4 cup Chicken broth (stock)
1 tbsp Extra virgin olive oil

Instructions


Heat oil in large saute' pan, add onion and cook until partially translucent. Add garlic and cook until onions are translucent. Add spices and mix with onions. Next, add rinsed, dried Quinoa and saute' for 3-4 minutes, stir frequently. Add frozen peas, olives, tomato sauce, and chicken broth. Bring to a boil. Cover and reduce heat and simmer for 20 minutes, or until all liquid is absorbed.

Serving size is 3/4 cup & 5 oz grilled chicken
