Spanish Tortilla Bites

4 large egg Egg
100 ml Whole milk 3.3%
1 potato Potato (cold, cooked)
1/2 cup Parmesan cheese, grated


Grease your muffin tray, I used a little olive oil.

Slice the cold potatoes and place a couple of slices in each muffin hole.

Mix the egg and milk.

Pour on top of the potatoes.

Sprinkle with grated parmesan.

Put under a hot grill for 10-15 minutes.

Keep an eye on them so that they don’t burn, but you want the egg to be cooked through.

Turn out and pack with your picnic.
