Spice Rubbed Salmon with Mango Salsa

Ingredients


2 fillet (100g) Atlantic salmon, wild
1/2 tsp Cumin
1/2 tsp Chili powder
1 tsp Paprika
1 dash Ginger, dried
1 dash Salt
1 dash Black pepper
1 dash Cayenne pepper
1/2 tbsp packed Brown sugar
1 mango Mango (ripe, cut into chunks)
1/2 cup Cherry Tomatoes (chopped)
1/2 medium pepper(s) Jalapeno pepper (finely diced)
1 clove(s) Garlic (minced)
1/2 medium Red onion (finely diced)
1 whole lime(s) Lime juice (fresh)
1/2 tsp Granulated sugar
1/4 cup Cilantro (coriander)

Instructions


1. For the fish:

  • Combine all the rub ingredients (cumin, chili powder, paprika, ginger, salt, pepper, cayenne, sugar).
  • Rub the salmon down with the combined spices. There is no need to rub-down the skin side if you have skin.
  • Broil the salmon in the oven for about 7 minutes or until it flakes with a fork.


2. For the salsa:

  • In a bowl combine, mango, tomatoes, jalapeno, garlic, onion, lime juice, sugar, cilantro, salt, and pepper to taste and mix well.
  • Serve over salmon with rice.


 

Notes:

This recipe tastes even better made on the grill!
