1 onion(s) Sweet onion (small; chopped)
2 clove(s) Garlic (minced)
1 can(s) (16 oz) Diced tomatoes, canned (diced. Organic, low sodium.)
114 gm Green chili peppers, canned (diced)
1 can (15oz) Black beans, canned (Organic, low sodium. Rinsed)
1/2 tsp Cumin
1/4 tsp Cayenne pepper
1/2 tsp Chili powder
1 tbsp Cilantro (coriander) (fresh, chopped. Can sub parsley.)

Instructions


Sauté chopped onion and minced garlic in olive oil over medium heat until tender. Add tomatoes and green chilies. Reduce heat and cook uncovered for 6 to 8 minutes or until thickened. Stir in beans and remaining ingredients. Cover and heat 5 minutes more.
