Ingredients


1/8 tsp Black pepper
1 cup pieces Button mushrooms (thinly sliced)
6 cup Chicken broth (stock), low sodium
1 tbsp Cilantro (coriander) (chopped)
1 tbsp Extra virgin olive oil
1 tsp Fish sauce
2 clove(s) Garlic (minced)
2 tbsp Green onion, scallion, ramp (thinly sliced)
1 tbsp Jalapeno pepper (minced)
1 tbsp Lime juice (fresh)
1 tsp Sesame oil
341 gm Shrimp, raw (uncooked)
114 gm Spaghetti, whole-wheat, dry

Instructions


Cook spaghetti until aldente.

Meanwhile add oil to a large pot or dutch oven. Add garlic, jalapeno and green onions. Saute for 1-2 minutes.
Pour in chicken stock, fish sauce and sesame oil. Bring to a simmer.

Stir in mushrooms and shrimp. Simmer until the mushrooms are tender and the shrimp is fully cooked.

Take off of the heat and stir in pepper, lime juice, and cilantro. Serve immediately.

Garnish with extra lime wedges and cilantro if desired.
