Spicy Sweet Potato Tacos

1 medium potato Sweet potato (peeled and chopped)
1 bunch Spinach (torn into bite size pieces)
1/2 cup White onion (sliced)
2 tbsp Coconut oil
6 small tortilla(s) Tortilla, corn
2 avocado(s) Avocado
1 cup chopped or diced Tomatillo
1/4 cup Cilantro (coriander)
1 tsp Sea salt (to taste)
1 medium pepper(s) Jalapeno pepper (minced)
1 fruit Lime (juiced)


  1. warm tortillas on a skillet over medium heat, cover in a clean towel and put aside
  2. warm 1 tbsp of coconut oil in a skillet and saute the sweet potato and onion until soft, add the spinach to wilt and season with some salt and pepper to taste 
  3. in a blender add the avocado, tomatillo, jalapeño, cilantro, sea salt and lime juice, mix until well combined
  4. place 3 warm tortillas per plate, fill with sweet potato mixture, fold over and top with your tomatillo guacamole.
