397 gm | Waitrose Smoked British Thick Back Bacon (chopped) |
142 gm | White mushrooms (sliced) |
1 tbsp | Ghee |
284 gm | Spinach |
114 gm | Cheddar cheese (shredded) |
6 large | Egg |
1/4 cup | Heavy cream, 38% M.F. |
1 tsp, leaves | Basil, dried |
1 tsp | Salt and pepper (season to taste) |
Pre-heat the oven to 180°C (350°F)
In a medium sized pan, fry the chopped bacon for a few minutes until cooked through
Add the ghee and mushrooms and sauté for 2-3 minutes
Put the eggs and cream into a mixing bowl with the salt and pepper and whisk together
Add the basil and half of the cheese to the egg mixture, combine well
Place the bacon, mushroom and spinach evenly over the base of a 9” ovenproof dish
Pour the egg mixture over and sprinkle the rest of the cheese on top
Bake in the oven for approx 20 minutes until the egg is cooked through
