Notes:
- This recipe is a great way to incorporate leafy greens into your child's diet. Baby spinach is mild in flavor and has a soft texture, making it a great choice for kids who may be picky eaters.
- You can substitute the strawberries and blueberries for other fruits, such as sliced apples or mandarin oranges, depending on your child's preferences.
- To make the dressing, whisk together the maple syrup, yellow mustard, salt and pepper, olive oil, and lemon juice. If your child is sensitive to tangy flavors, reduce the amount of lemon juice and mustard.
- Toast the pecans in a dry pan over medium heat until fragrant and lightly browned. Allow them to cool before adding them to the salad.
- Crumble the goat cheese into small pieces and sprinkle it over the top of the salad just before serving. If your child is not a fan of goat cheese, you can omit it or use a different type of cheese instead.
- To make the salad more appealing to kids, you can arrange the ingredients in a colorful and fun way. For example, arrange the strawberries and blueberries in a pattern on top of the baby spinach, or use a cookie cutter to cut the goat cheese into fun shapes.
- Serve the salad with some whole grain crackers or bread to make it a more filling meal.
