Ingredients


3 cup Baby spinach
1 cup halves Strawberries
1/2 cup Blueberries
1/4 cup Nuts, pecans, dry roasted
1 tbsp Maple syrup
1 tbsp Yellow mustard
1 dash Salt and pepper
1 tsp Olive Oil, Extra Virgin
1 whole lemon(s) Lemon juice
1/2 cup Goat cheese, soft

Instructions


  1. Begin by washing and draining 3 cups of baby spinach.
  2. Cut 1 cup of strawberries in halves and add them to the spinach in a large bowl.
  3. Add 1/2 cup of blueberries to the bowl.
  4. Sprinkle 1/4 cup of dry roasted pecans over the spinach and berries.
  5. In a separate small bowl, whisk together 1 tablespoon of maple syrup, 1 tablespoon of yellow mustard, a dash of salt and pepper, and 1 teaspoon of extra virgin olive oil.
  6. Drizzle the dressing over the salad and toss gently to combine.
  7. Squeeze the juice from 1 whole lemon over the salad.
  8. Add 1/2 cup of soft goat cheese crumbles and toss again.
  9. Serve and enjoy your delicious and nutritious salad
