|1 tbsp||Coconut oil|
1. Place eggs, spinach, and salt into a blender and blend until well combined.
2. Heat coconut oil in a large skillet over medium heat. Add egg mixture and continuously stir to scramble eggs while they cook.
3. Remove from pan and divide between 2 plates.
