2 large potato Sweet potato (more if you're doubling recipe)
1 tbsp Coconut oil (melted)
1 pinch Sea salt
2 cup Spinach
2 clove(s) Garlic (smashed)
1 tbsp Coconut oil
1 tbsp Cranberries, dried
1/4 cup Walnuts (toasted)


  1. Scrub sweet potatoes, pat dry, rub with coconut oil and sprinkle with salt. Bake at 400 F on a parchment or foil-lined baking sheet for 1 hour, or until soft and creamy inside.
  2. Heat coconut oil and garlic in the pan and add spinach. Saute to your liking.
  3. Combine sauteed spinach, cranberries, and walnuts and put on top of each potato half.
