2 large potato Sweet potato
1 tbsp Coconut oil (melted)
1 pinch Sea Salt
1 tbsp Coconut oil
2 clove(s) Garlic (smashed)
2 cup Spinach
1 tbsp Cranberries, dried
1/4 cup Walnuts (toasted)


  1. Preheat oven to 400 F (204C).
  2. Scrub sweet potatoes, pat dry, rub with coconut oil and sprinkle with salt. Bake on a parchment or foil-lined baking sheet for 1 hour, or until soft and creamy inside.
  3. Heat coconut oil and garlic in the pan and add spinach. Saute to your liking.
  4. Combine sauteed spinach, cranberries, and walnuts and put on top of each potato half.
