2 large potato Sweet potato
1 tbsp Avocado oil
1 pinch Sea Salt
2 tbsp Nutritional yeast
2 cup Spinach
2 clove(s) Garlic (smashed)
1 tbsp Avocado oil
1 tbsp Cranberries, dried
1/4 cup Walnuts (toasted)

Instructions


  1. Scrub sweet potatoes, pat dry, rub with avocado oil and sprinkle with salt. Bake at 400 F on a parchment or foil-lined baking sheet for 1 hour, or until soft and creamy inside.
  2. Cut potatoes in half, and scoop out cooked potatoes into a mixing bowl.  Be sure to leave about a 1/2" shell of potato and skin.
  3. Heat avocado oil and garlic in the pan and add spinach. Saute to your liking.  
  4. Combine sauteed spinach, nutritional yeast, cranberries, and walnuts with potato.  Fill each potato half
