Use a spiral slicer to turn your beets into noodles.
To make dressing: Simply blend all ingredients in a high speed blender until smooth. This is enough for 1 serving.
Place your spiralized beets in a large bowl and drizzle the dressing on top. Mix well to combine and garnish with a sesame seed avocado, and cilantro.
