Spiralized Beet Salad with Liquid Gold Dressing

2 beet(s) Beets, raw (spiralized)
1/4 cup Lemon juice (for dressing)
1/2 clove(s) Garlic (for dressing)
1 tsp minced Ginger root (for dressing)
1 tsp Soy sauce, tamari (for dressing)
1 drop(s) Stevia sweetener, liquid (for dressing)
2 tbsp Extra virgin olive oil (for dressing)
2 medium Brazil nuts (for dressing)
1/4 avocado(s) Avocado (for garnish, as desired)
1 tsp Sesame seeds (for garnish)
2 sprig Cilantro (coriander) (for garnish)


1. Wash, peel and dry beets. Use a spiral slicer to turn your beets into noodles. Alternatively, you can purchase spiralized beets from the ready-made section available at many grocery stores.

2. To make dressing, simply blend lemon juice, garlic, ginger, tamari soy sauce, stevia, olive oil and brazil nuts in a high speed blender until smooth. This is enough for 1 serving.

3. Place your spiralized beets in a large bowl and drizzle the dressing on top. Mix well to combine and garnish with avocado, sesame seeds and cilantro.
