2 medium Apple (julienned)
2 medium Carrots (julienned)
1 medium stalk(s) Celery (julienned)
1/4 cup Mung bean sprouts, raw
1/4 cup Chickpeas, canned, drained
1/4 cup Alfalfa sprouts
2 tbsp Pumpkin seeds (pepitas) (toasted)
1/4 cup Cilantro (coriander) (about a handful, chopped)


Combine ingredients and arrange on a plate. Toss with ASIAN DRESSING. Garnish with pumpkin

seeds and cilantro. Season with sea salt and pepper.

Make 1 batch of Asian Dressing (without lemongrass).
