Traditional Egg Salad Sandwich

Ingredients


1 medium Egg (hardboiled)
1 tbsp Mayonnaise, with olive oil
1/4 cup chopped Celery
1/2 cup Arugula (or leaf lettuce)
2 medium slice(s) White bread

Instructions


  1. On the stovetop, place the egg in a pot of cold water, about 1 inch above the egg. Bring the water to a boil over medium-high heat, then cover. Remove from the heat and set aside for 8-10 minutes. Then, drain the hot water and add ice water to cool the egg.
  2. Drain the ice water from the egg, peel, and chop to desired texture.
  3. In a small mixing bowl, add the chopped egg, mayonnaise, and chopped celery. Stir to combine.
  4. To assemble the sandwich:
    • Spread the egg salad mixture onto one slice of bread.
    • Add the arugula or leaf lettuce.
    • Top with the remaining slice of bread.
