2 tbsp Balsamic Vinaigrette (for dressing)
1 1/2 cup Cilantro (coriander) (chopped)
1 cucumber(s) Cucumber
3 tbsp Extra virgin olive oil (for dressing)
1 tbsp Fish sauce (for dressing)
1/2 tsp Granulated sugar (for dressing)
1 tbsp Lemon juice (for dressing)
3 mango Mango
1 medium pepper(s) Red bell pepper
1 pinch Salt and pepper (to taste)
1 tbsp Sriracha (for dressing)


Cut mangoes, red pepper, and cucumber into small pieces. Roughly chop cilantro to the equivalent of approximately 1 1/2 cups.

Toss cut fruit and vegetables together.

Combine all ingredients for the dressing. Taste before adding salt and pepper and add to taste.

Pour 2/3 of the mixed dressing over the salad and toss. Add more dressing as needed.

Serve and enjoy!
