Steamed Fish with Ginger & Onion

Ingredients


100 gm Bok choy
4 fillet Whitefish
2 piece, 1-inch Ginger root (finely shredded)
2 clove(s) Garlic (finely sliced)
2 tbsp Soy sauce, low sodium (or coconut aminos)
1 tsp Rice wine
1 bunch Green onion (finely shredded)
1/2 cup Brown rice, medium-grain, cooked (or rice of choice; to serve)
1/4 cup Cilantro (coriander) (chopped, for garnish; optional)
1 fruit Lime (cut into wedges)

Instructions


  1. Preheat oven to 350°F.
  2. Cut a large rectangle of foil (big enough to make your own envelope with).
  3. Place the Bok choy on the foil, next, add the fish, then the ginger and garlic.
  4. Drizzle the soy sauce and rice wine over everything on the foil and season with salt and pepper.
  5. Close up the foil envelope, place it in the oven, and cook for about 20 minutes.
  6. Meanwhile, prepare rice as per package instructions.
  7. To serve, divide rice among serving bowls, top with the contents of the foil pouch, garnish with cilantro, and squeeze a bit of lime juice over top.

Quick Tips:

  • Use Gluten-Free brown rice - if you have celiac disease
  • Other optional toppings include shelled edamame and banana peppers
