|1 1/2 tsp||Coconut oil (for brushing pan)|
|150 gm||Sweet potato (sliced into thin medallions)|

1. Preheat your oven to 350 degrees F and prepare a large parchment-lined baking sheet, silicone sheet or ceramic pan by brushing the coconut oil on the bottom of the sheet so that the potato doesn't stick.
2. Slice your sweet potatoes into thin medallions and place them on the baking sheet, making sure they have enough wiggle room and aren't crowded on the sheet.
3. Add your baking sheet to the oven and bake for 30-40 minutes, or until soft.
4. Once soft, remove the sheet from the oven and sprinkle each sweet potato with cinnamon and sea salt.
For crispier sweet potatoes, you can toss them in more coconut oil before baking.
Test out an assortment of spices for different flavour options.
