These cinnamon baked sweet potato slices are the perfect side dish with a hint of sweetness!


1 1/2 tsp Coconut oil (for brushing pan)
150 gm Sweet potato (sliced into thin medallions)
1/2 tsp Cinnamon
1/2 tsp Sea salt


1. Preheat your oven to 350 degrees F and prepare a large parchment-lined baking sheet, silicone sheet or ceramic pan by brushing the coconut oil on the bottom of the sheet so that the potato doesn't stick.

2. Slice your sweet potatoes into thin medallions and place them on the baking sheet, making sure they have enough wiggle room and aren't crowded on the sheet.

3. Add your baking sheet to the oven and bake for 30-40 minutes, or until soft.

4. Once soft, remove the sheet from the oven and sprinkle each sweet potato with cinnamon and sea salt.
