Stewed Artichokes with Fava Beans

1 tbsp Garlic (chopped)
1/3 cup Green onion (chopped, or leeks)
1/3 cup Extra virgin olive oil
1 cup Broad beans (fava beans), canned (drained)
2 cup Frozen artichoke (10-12 hearts)
1 tsp Marjoram (crushed)
1 tsp Salt
2 tbsp Lemon juice
1/2 cup White wine
2 cup Water, filtered
1/3 cup Dill, fresh (chopped)


  1. Saute scallions and garlic in olive oil over low heat for 2-3 minutes (careful not to burn!).
  2. Add the fava beans and drained artichokes, salt, crushed marjoram and white wine. Cook over medium heat for 5 minutes.
  3. Add water and lemon juice, bring to low boil and cook uncovered for 10 minutes. Remove from heat and add dill. Gently stir to combine all and allow to sit for a few minutes before serving.
  4. Serve hot from the stove, garnished with fresh dill and a wedge of lemon alongside a good piece of bread.
