Stir-fried Beef with Oyster Sauce & Rice Noodles

A stir fry is always a quick and healthy go-to meal that's packed with veggies and protein. This low FODMAP version is no different!

Ingredients


200 gm Beef, inside round steak, lean
1 tbsp Oyster sauce (gluten free)
1 tbsp Sesame oil
1 tbsp Soy sauce, tamari (gluten free)
2 tbsp Peanut oil
4 green onion (stem) Green onion (green tops only, chopped)
1 medium Carrots (cut lengthways and cut into strips)
200 gm Oyster mushroom (roughly chopped)
1/2 medium pepper(s) Green bell pepper (deseeded and cut into strips)
125 gm Rice noodles, dry
1/4 cup Water
2 cup Baby spinach (or bok choy)
1/2 bunch Cilantro (coriander) (washed and chopped)

Instructions


  1. Marinate the Beef

    • Slice the beef into thick pieces, cutting against the grain.
    • Place in a bowl and add oyster sauce, sesame oil, and soy sauce. Mix well and let marinate for 15 minutes.
  2. Prepare rice noodles according to package directions.

  3. Stir-Fry the Beef

    • Heat peanut oil in a wok or large frying pan over high heat.
    • Drain the beef, reserving the marinade.
    • Once the oil is just starting to smoke, add the beef and stir-fry for 2 minutes. Remove and set aside.
  4. Cook the Vegetables

    • Wipe the pan clean with a paper towel.
    • Reheat the wok on high heat and add a little more oil.
    • Add spring onions, carrots, and mushrooms, stir-frying for 3–4 minutes.
  5. Combine & Simmer

    • Add bell pepper, rice noodles, and water with the reserved marinade.
    • Cover and let simmer for 2–3 minutes.
  6. Finish & Serve

    • Remove the lid and return the beef to the wok, stir-frying for another 3–4 minutes until fully cooked.
    • Stir in the baby spinach and cilantro until just wilted.
