Ingredients


2 cup Almond flour/meal, Bob's Red Mill
1 tsp Baking powder
3 medium egg Egg
1/3 cup Coconut oil (melted at room temperature)
4 tbsp Honey (reserve 1 tbsp)
1 tsp Vanilla extract, pure
1 pinch Salt
1 cup slices Strawberries
1/4 cup whole Almonds, raw (chopped)

Instructions


Preheat oven to 350 degrees and grease a 8 inch cake pan with coconut oil.

In a mixing bowl, add almond meal, baking powder, eggs, 3 tbsp coconut oil, honey, vanilla and salt and mix until well combined by hand or with a hand-held mixer.

Spread the batter evenly over the bottom of the cake pan, then arrange the sliced strawberry slices on top.

Garnish with the almonds and then drizzle over remaining tablespoon of honey.

Bake for 25 - 30 minutes or until cake tester comes out clean.

Cool before serving.
