Ingredients


2 cup whole Strawberries
2 beet(s) Beets, raw (chopped)
3 cup Kale (or arugula)
1/4 cup Basil, fresh (chopped, optional)
1/2 whole lemon(s) Lemon juice (for dressing)
1/4 cup Extra virgin olive oil (for dressing)
1/4 cup, crumbled Feta cheese, low fat (or goat cheese, for dressing)
1/4 cup Pumpkin seeds (for dressing)

Instructions


Preheat oven to 350 degrees. Wash beets and chop into bite-size pieces. Place in a baking dish with a lid and bake for 45 minutes or until fork tender. Set aside and let cool.

Once cooled, combine beets in a large bowl with strawberries and kale. Toss with lemon juice and olive oil. Sprinkle with feta and top with pumpkin seeds.
