1 cup Water, filtered
1/2 cup Buckwheat groats, dry (If avoiding grains, replace with one large egg)
3 large pepper(s) Red bell pepper (Use any colour of pepper, sliced in half lengthwise, seeds removed)
454 gm Beef, ground, lean (Organic, if possible)
1 small Red onion
1 clove(s) Garlic
1 tsp Parsley, dried
1 tsp, leaves Thyme, dried
1 tsp Oregano, dried
1/2 tsp Himalayan sea salt
1 dash Black pepper


  1. Preheat oven to 425 degrees Fahrenheit.
  2. Bring water to a boil.  Rinse buckwheat and add to boiling water.  Turn down to a simmer and cook for approx. 15 mins
  3. Combine ground beef, buckwheat, onion, parsley, garlic, thyme, oregano, salt, and pepper in a bowl.  Massage gently to blend in buckwheat.
  4. Tightly fill peppers with the meat filling.
  5. Place on a baking tray and bake for 30 minutes.
