Sun-butter Energy Bites
Health Highlights
Made from sunflower seed butter, this nut free recipe is great for school. Makes for a great energy booster to fuel up with and is fun for kids to make too!

Ingredients


1 cup Oats, large flakes, dry
1/2 cup Flaxseed meal (ground)
1/2 cup Dark chocolate chips
1/2 cup Sunflower seed butter (or other nut butter substitute)
1/3 cup Honey (or 1/4 cup depending on how sweet you want them to be)
1/3 cup Cranberries, dried (raisins or currants also work well and are less expensive)
1 tsp Vanilla extract, pure (I use non-alcoholic pure vanilla extract)

Instructions


  1. In a large bowl, stir together oats, flax, chocolate chips, sunflower butter, honey, cranberries and vanilla until well combined.
  2. Use a tablespoon (15 mL) top portion oat mixture. With clean hands, roll into balls and place on plate. Cover and refrigerate for up to 2 weeks; they also freeze well for up to 2 months..
