Ingredients


1 tbsp Balsamic vinegar
1/2 cup Cucumber (grated)
2 tbsp Extra virgin olive oil (or hemp oil)
1 clove(s) Garlic
1 tsp Oregano, dried
1 tsp Rosemary, dried
1/4 tsp Salt and pepper (to taste)
1 cup Sun-dried tomatoes
1/4 tsp, ground Thyme, dried
1 cup chopped Tomato
1 cup Water (if needed)

Instructions


Soak sun-dried tomatoes in water for 20 minutes. Retain this water. In a food processor, process all ingredients, including sun-dried tomatoes, until desired consistency is reached.

Keep refrigerated for up to 1 week.

Recipe makes 3 1/2 cups.
