Super Simple Ginger Carrot Soup

Ingredients


1 piece, 1-inch Ginger root (chopped into small pieces)
4 clove(s) Garlic (minced)
454 gm Carrots (peeled and chopped)
4 cup Vegetable stock/broth, low sodium
1 pinch Salt and pepper (to taste)
1/4 tsp Cinnamon (to taste)
1/4 tsp Nutmeg, ground (to taste)

Instructions


  1. Heat soup pot over medium-high heat and add ginger and minced garlic and sauté for 1 minute. Can add a splash of water so it doesn't stick.
  2. Add carrots and continue to sauté for 4-5 minutes, until slightly softened.
  3. Add the vegetable stock broth.
  4. Increase heat and bring to a boil.
  5. Once boiling, lower heat and simmer until vegetables are tender. About 20-25 minutes.
  6. Puree the soup with an immersion blender or a regular blender (you may need to do it in batches if your blender is too small). 
  7. Season with salt, pepper, and a sprinkle of cinnamon and nutmeg to taste.
